More Superfoods Desserts

Superfoods—such as leafy greens, berries, green tea, and salmon—have so many benefits, from lowered stress, better diabetes management, even healthier lungs.

Earlier this week, we shared some dessert recipes that are as delicious as they’re healthy—and all thanks to their superfoods ingredients! Now, as a bonus, we’d like to share a few more. So prep your kitchen and get ready for some delicious and healthy desserts featuring your favorite superfoods!

Superfood Cake Bars

Total Time: 25 minutes Servings: 16

Superfood Cake Bars

Ingredients

  • 1 cup (75g) oats
  • 1/2 cup (55g) plain (all purpose) flour
  • 1/2 cup (55g) wholemeal flour
  • 2 teaspoons baking powder
  • 1 tablespoon beetroot powder
  • 2 eggs
  • 3/4 cup (100g) coconut sugar
  • 3 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup (100ml) almond milk
  • 1 cup (100g) roughly chopped mixed nuts, such as
    • pecans
    • almonds
    • walnuts
  • 1 cup (100g) chopped dried fruit, such as
    • raisins
    • dates
    • figs
    • goji berries
  • 1/3 cup (50g) mixed seeds, such as
    • flax
    • chia
    • hemp
    • sunflower

Directions

  1. Preheat oven to 350 F and lightly grease an 8×8” baking tin with oil.
  2. In a large bowl, whisk the oats, flours, baking powder and beetroot powder together.
  3. In another bowl, using an electric mixer, beat together the egg, coconut sugar, coconut oil and vanilla, until smooth. Stir in the almond milk, nuts, fruit and seeds. Add in the dry ingredients and gently mix to combine.
  4. Add the batter and smooth out. Cook for 15-20 minutes then allow to cool in the tin for a few minutes before turning out onto a wire rack to cool completely. Cut into squares and store in an airtight container.

Chocolate Avocado Mousse

Cooking Time: 1 minute! Servings: 4

Chocolate Avocado Mousse

Ingredients

  • 2 very ripe bananas, peeled, chopped
  • 2 ripe avocados, flesh scooped
  • 2 tbs hazelnut or almond butter
  • 1/2 cup (40g) raw cacao powder
  • 2 tbs coconut milk
  • 1/4 cup (30g) cacao nibs
  • 2 x 125g punnets raspberries

Directions

  1. Place the banana, avocado, nut butter, cacao powder, coconut milk and a pinch of salt in a blender and whiz until smooth.
  2. Pour into a shallow serving dish, then cover and chill for 30 minutes or until set.
  3. Scatter with the cacao nibs and berries to serve.

Healthy Pecan Pie

Prep & Cooking Time Total: 45 minutes Servings: 8

Ingredients

  • 1/2 cup raw honey
  • 2 tbsp coconut oil, melted
  • 3 eggs
  • 1/2 tsp fresh orange zest
  • 1/8 tsp sea salt
  • 1 tbsp unsweetened almond milk
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • 3 tbsp whole wheat pastry flour
  • 2 cups raw pecans
  • 1 pie crust (whole wheat and/or organic)

Directions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, combine raw honey, coconut oil, eggs, fresh orange zest, sea salt, unsweetened almond milk, ground cinnamon, pure vanilla extract, and whole wheat pastry flour. Stir to combine.
  3. Arrange the raw pecans into the prepared 9-inch pie crust.
  4. Pour the liquid filling mixture over the pecans, spreading some with a spoon if necessary.
  5. Place into the oven and bake for 10 minutes at 400 degrees, then reduce the temperature to 350 degrees and bake for 20-25 minutes.
  6. The pie will rise in the oven. You’ll know it’s done when it has small cracks in the top and is no longer giggly.
  7. Remove from oven and allow to cool, preferably overnight.
